Salsa, Sangrias, & Slumdog
Last night I had a MNO with some MMs - it was a fun night out- or rather in as we were at B's house. We had salsa (and an amazing curried butternut squash soup and some awesome Byerlies chocolate deserts) and sangrias (I had ginger ale!) and watched the movie Slumdog Millionaire. One of the gals is from India so she told us some of the backstory about various parts of the movie. Eleanor was allowed to attend as she can't be too far from mom! It's so nice to get out with friends!
I made Southern Caviar. I always make Southern Caviar! Here's the recipe.
The recipe is funny because you can really make it fresh or from cans! Sometimes I use the Lime and Cilantro Rotel and also add rinsed black beans. I always add some "hot shot" pepper. I usually serve with "scoops." Super Easy -- Enjoy!
Southern Caviar
Serves 8 or more at a cocktail party.
• 1 can white corn (shoe peg, if available) or white/yellow corn
• 1 can black-eyed peas
• 1 small green bell pepper (or half a large one), chopped
• 1 can Rotel tomatoes with green chiles in juices
• 1 bunch green onions, chopped
• 4 oz. Newman's Own olive oil and vinegar dressing (or make your own)
• Coarse salt
• Freshly ground black pepper
Directions:
Drain and rinse corn and peas. Mix corn, peas, pepper, tomatoes, onion and dressing; season to taste with salt and pepper.
