Dinner

Last night we (mostly Kathryn) were very hungry so instead of dinner in a pumpkin (it takes awhile to cook) we had Mexican Chicken & Rice Dinner. I forgot how EASY (we had all the ingredients on hand) and GOOD this recipe tastes. It's originally a recipe from the Ps but we've changed it slightly.

Mexican Chicken & Rice Dinner
15 minutes - 4 servings

4- Boneless, skinless chicken breast halves
1- Jar of chunky or thick salsa
2- cups minute white rice - uncooked
1- cup frozen corn
1- cup shredded cheeese (we use the Mexican variety- or cheddar would work)
1- 15oz can of black beans - drained

Heat oil in large skillet, add chicken, cook 4 minutes on each side - until cooked through, remove chicken from skillet.
In skillet add 1 1/3 cup water and salsa- bring to a boil.
Stir in rice, corn, and beans, top with chicken and cheese.
Cover, cook on low heat for 5 minutes or until cheese melts.
EAT IT UP!!!
